Chemical properties

Milky white to light yellowish brown powder. Soluble in water at room temperature to form a translucent viscous liquid, insoluble in organic solvents such as ethanol, isopropanol and acetone. Xanthan gum aqueous solution has good viscosity-increasing property and is quite stable in the range of -4-80°C. When the concentration of ethanol, isopropanol or acetone in water exceeds 50%-60%, it will cause the precipitation of xanthan gum . The ability to resist acid and alkali and bio-enzyme degradation is very strong. In the range of Ph value 1.5-13, the viscosity of xanthan gum aqueous solution is not affected by Ph value. Xanthan gum is a natural polymer compound, the oral LD50 of rats is >10g/kg, and ADI does not need special regulations (FAO/WHO, 1994).
